連續攝取酒精對大白鼠體內含硫胺基酸代謝之影響 楊惠婷1, 周欣如2, 徐詩雯2, 張愛漂2, 黃士懿2* 台北醫學大學藥學系博士班1 台北醫學大學保健營養學系2 本實驗旨在探討高濃度酒精的連續投予對於大白鼠體內含硫胺基酸代謝的影響。將酒精 (30%, 每公斤體重 3 克)灌食於雄性大白鼠連續 7 天,於第 1、3、7 天分別犧牲,收集血 液及臟器,進行含硫胺基酸、麩胱苷肽及維生素B6的分析。結果顯示,所有臟器(腦、心臟、 肝臟、腎臟)中的牛磺酸濃度均顯著的下降;除腦部外,至實驗結束仍未見回復。本研究亦 發現血漿中牛磺酸與維生素BB6的濃度於實驗中下降的程度呈現出顯著之相關性。各組織中 SAM/SAH比例也有下降的情形,顯示出酒精具有抑制含硫胺基酸甲基化作用之情形。這些結 果均顯示出在酒精介入的情況下,大白鼠體內組織中的含硫胺基酸因需求不同而有重新分佈 的情形,而牛磺酸與維生素B6B 變化的高度相關性也顯示出腦部對於牛磺酸的急劇需求而顯著 的增加了體內轉硫作用,因而使腦部牛磺酸的濃度可不受酒精干擾,於 7 天內逐漸回復至正 常。綜合以上所述,本研究證實了短期投予大白鼠高濃度酒精對於大白鼠體內組織的含硫胺 基酸代謝會造成顯著之變化。 關鍵字:含硫胺基酸、牛磺酸、酒精、維生素BB6、轉硫作用、轉甲基作用
