精白米及不同量米麩對大白鼠體內膽固醇代謝的影響

Effects of polished rice and various rice bran amounts on cholesterol

metabolism in rats

中文摘要 本實驗目的在於探討台農 67 號稻米之精白米及不同量米麩纖維對大老鼠(Wistar 品系 ) 膽固醇代謝的影響。雄性大白鼠約 280g,隨機分為八組,再分兩大組供實驗Ⅰ 及Ⅱ 。實驗Ⅰ:以玉米澱粉為醣類來源是玉米澱粉組、精白米取代玉米澱粉為精白米 組, 各添加 1%膽固醇的玉米澱粉加膽固醇組及精白米加膽固醇組。實驗Ⅱ:精白米 加膽固 醇組其纖維來源為米麩,依含量分為 2%米麩組、5%米麩組、10% 米麩組及 20% 米麩組 。實驗Ⅰ及Ⅱ皆進行四週後取下腔動脈血、肝臟,並收集最後一週的糞便,以供 分析 血清膽固醇、三酸甘油酯及總脂質,肝臟總膽固醇和總脂質,糞便中酸性及中性 固醇 。結果發現飼料中含 1%膽固醇會促肝臟總膽固醇及總脂質增加,並增加糞便總 中性固 醇及酸性固醇排出。而精白米比玉米澱粉有較低的血清總膽固醇,及促進糞便中 總膽 酸排出,但不會增高糞便中總膽酸排出濃度。而米麩添加量會增加糞便總膽酸排 出, 且也能稀釋總膽酸排出濃度。因此由實驗結果顯示,精白米可以有效減少血清總 膽固 醇及增加總膽酸的排出,有利於體內膽固醇的排除,米麩則可以抑制營養素的吸 收消 化及增加總膽酸的排出,但對體內膽固醇的影響並不明顯。
