臺北縣國小四年級學童網路蔬果營養教育課程之學習成效探討

The effect of web program for the fourth grade elementary students

in Taipei county

中文摘要 本研究是以臺北縣 9 所國小四年級抽樣班級學童共 290 名為研究對象,評估學童 之營養知識、飲食態度與飲食行為,並以自編之量表探討網路營養教育課程介入 的影響。研究方法是於網路營養課程介入前、後進行問卷測試,將資料彙整後以 SPSS10.0/Windows 套裝軟體進行各項統計分析,以百分比、平均值、標準差、t-考驗及相關分析等方法進行分析。結果發現:男童平均體重及身體質量指數 (BMI)平均值均明顯高於女童,學童營養知識尤其是蔬果份量知識有待加強, 國小學童對於蔬果攝取普遍具有正向的態度,但仍以傾向選擇自己喜歡吃的東西 代替選擇對健康有益的食物,尤以男生飲食態度得分明顯較女生為低。學童之營 養知識、態度及行為間均呈現正相關性。網路營養課程介入後營養知識及飲食態 度之得分均達顯著增加(p<0.05), 其中 2/3 營養知識題答對率均較介入前明顯 增加,態度題則以非常同意「為了身體健康,應該要多吃蔬菜水果」、「多吃蔬菜 水果才能保持美麗好身材」及「每天要吃二份以上的水果一點也不困難」的比例 增加近 2 倍改善最多,可知網路營養課程介入有立即效果,可幫助學童學習蔬果 營養知識及改變攝食態度,建議可研究開發多樣化網路課程作為學校施行營養教 育之輔助教材,期使學童達到良好的均衡飲食成效。 關鍵詞:國小學童、營養知識、營養教育、網路教育 英文摘要

This study investigated the effect of web nutrition education program intervention for the 9 fourth grade classes elementary students in Taipei county. The study is involved in the web nutrition program on the questionnaire test before and after, each statistical analysis by the SPSS10.0/Windows software, by methods and so on percentage, mean value, standard deviation, t-test and correlation analysis. Result discovery: The boy average body weight and the body mass index (BMI) mean value is higher than the girl, the elementary students in Taipei county nutrition knowledge of fruits and vegetables waits for strengthening, the students have forward attitude generally regarding the fruits and vegetables ingestion, but still favored the thing which chooses itself to like eating to replace to health beneficial food, compares the female student lowly obviously especially take the male student diet attitude score as. Nutrition knowledge, the attitude and the behavior of the students assume right correlation. After the web nutrition education program intervention, score of the nutrition knowledge and the diet attitude reaches obviously increases (p<0.05), before 2/3

nutrition knowledge topic responds rate involves, increases obviously, the attitude topic by agreed that “for the health, should probably eat the vegetables fruit”, “to eat the vegetables fruit to be able to maintain the beautiful good stature” and “must eat two above portions fruits are not difficult every day” to increase near 2 times of improvements to be most. The web nutrition education program intervention to have immediately the effect, may help the elementary students to increase the fruits and vegetables nutrition knowledge and the change s in diet attitude, suggested that may study the development diversification web nutrition education program to take the school execution. The nutrition education is auxiliary the teaching material, enables the elementary students to achieve the good balanced diet result.
