酒精攝取對於大白鼠腦部及血液脂肪酸比例變化的影響 楊惠婷1、徐詩雯2、張愛漂2、黃士懿2 1臺北醫學大學藥學系博士班、2臺北醫學大學保健營養學系 本研究旨在探討飲水中添加酒精對於實驗動物(Sprague Dawley)體內脂肪 酸代謝是否造成影響。實驗共分為雌、雄鼠二組(n=25),於實驗初期先犧牲一 批實驗動物(每組 5 隻)作為基準組,進入實驗期後於飲水中加入 30%酒精,每日 紀錄飲水量,於每週犧牲一批動物(每組各五隻) ,連續給予一個月後全數犧牲, 收集血液及組織檢體進行紅血球及腦部磷脂質脂肪酸分析,並依不同時間點進行 比較。結果發現,隨著酒精的攝取,血液中 n-3 族脂肪酸比例有顯著下降的情形 (p<0.05),其中二十二碳六烯酸(DHA)的比例也明顯下降,至第四週時仍無回復 之情形。而腦部的 n-3 族脂肪酸於第 3 週後也有下降的趨勢(p<0.05),與第 0 週 相比較,酒精的攝取對於腦部 n-6 族也有顯著的影響。此實驗於雄鼠與雌鼠間均 呈現出相似的結果。因此,本研究證實連續一個月酒精的攝取不論是雄性或是雌 性大白鼠的腦部脂肪酸組成,尤其是 n-3 族脂肪酸代謝造成影響,此結果亦反映 在週邊紅血球磷脂質脂肪酸組成上,腦部脂肪酸代謝與週邊紅血球磷脂質脂肪酸 於高量酒精攝取下呈現高度的正相關性(r = 0.82, p<0.05)。 關鍵詞:酒精、紅血球磷脂質、n-3 族脂肪酸、二十二碳六烯酸
