P rep a rin g haklava according to the high standards o f those times s no mean feat, and one o f the tests o f an accomplished cook. No less than one hundred tissue thin sheets o f pastry had to he layered in the tray, and when a gold sovereign was dropped from half a metre’s height above it, the c o in was expected to pierce right through the pastry and make contact with the bottom o f the tray. Ramazan iftar sofraları imparatorluk için biraz da özel kuralların zamanı idi. Y em ek ve siniler kaldı rıldıktan, eller yıkandıktan sonra “mutfak em ini”, “buhur suyu” getirip evvela veziri azama, sonra sıra ile d iğer vezirlerle divan erkanına sunardı. Buhur suyu, sarı sandal, buhr-u meryem, ham öd ağacı, kalenbek, aselbent, kırmız, lotur, çöğen to humu, susam kökii, misk, çiçek suyu, gül suyu muayyen bir ölçüde kaynatılarak yapılırdı. Suyun süzülmüş beyaz kısmı padişaha, geriye kalanı ve zirlere v e devlet ricaline, derecelerine göre yaldız lı, yaldızsız şişe ve kaselerle sunulurdu. Tevziatı yapanlara h ediye verilmesi adetti. That cook would then be appointed to the post o f chief pantry keeper f o r the year. The secret o f the delicious flavour was to stir the onions in butter over a low heat f o r three to three and a half hours. There were many other customs associated with Ramazan. For example, fo llo w in g ifta r at the palace the intendant o f the kitchens would prepare an aromatic tisane f o r the sultan, the grand vezir and the other vezirs. This infusion containing Car- duelis spinus, cyclamen, Indian aloe, calambac agalloch, acacia gum, cochineal, soapwort, sesame root, musk, orange flow er water and rose water would be filtered and presented to the sultan’s vezirs and high ranking officials in gilded or plain bottles and bowls according to their status. 'This gift took the place o f an invitation to attend the ceremo ny o f the Holy Mantle on the fifteenth o f the month. Ihe wealthy held open table throughout Ramazan, and anyone who knocked on the door at iftar time would be invited in to eat at tables laid in the halls. On one occasion as the hour o f iftar approached Mahmud II ordered his barge to berth at Salacak on the Asian shore o f the Bosphorus, and arrived at the house o f a prominent official named Durrizade

Sarayın Soğanlı Yumurtası
Cut medium sized mild onions in half lengthways and slice into thin semicircles. Sprinkle with salt to taste and saute gently in butter with a wooden spoon over a low heat (preferably fo r around three hours) until the onions are a golden colour. Drain off any excess butter and place the onions in a shal low pan. Sprinkle a spoonful o f granulated sugar over, add one spoonful o f vinegar, a little cinnamon and other spices as desired, then spread the onions in the pan, pressing out hollows fo r the eggs with the hack o f the spoon. Ober a low heat break the eggs over the onions, and pour a little hot buttery water around the edges o f the pan so that the yolks do not overcook and the whites are moist. Sprinkle with cinnamon and black pepper and serve.

Yağı süzülen soğan küçük tepsiye alınır, bir kaşık toz şeker ser pilir. Bir kaşık sirke, bir miktar bahar ve tarçın ek lenir, kaşığın tersi ile yayılır. Hafif ateşte kırılan yumurtaların aklarının hemen pişmemesi, sarılarının pişmesi için tepsi kenarlarından yağlı su dökülür. Tarçın ve karabiberle servis olunur.
Eggs with Onions Palace Style

served not in a clear crystal bowl hut in a strangely clo u d e d glass howl, and Mah mud II was surprised a fte r h a vin g been served with the house hold 's fin e s t ware throughout the rest o f the meal. D ü rriz a d e explained that the cook- had carved a bowl o f ice to keep the h oşaf cool without watering down the fra g ra n tly perfum ed f r u it ju ic e . “You know how to live, my frie n d , ” declared Mahmud II admiringly. Although much o f this p om p an d e x tra v a g a n c e o f past Ram azans has g o n e never to return, it is still a time o f carefully pre pared tables with spe cial dishes to celebrate the month o f fasting, and o f getting together with relatives, neigh bours and friends. •
