Peşmek,
tel helva, keten helva, çekme helva... Bunların
hepsi de pişmaniye aslında. Hani şu İzmitli pişmaniye
var ya, işte o! İzmit’in dört bir yanında ünlendiğine bak
mayın, aslında o İran’dan gelme. Büyük Larousse An-
siklopedisi’ne göre anavatanında ‘peşmek’ olarak bilini
yor. Peki, nasıl olmuş da pişmaniye olarak bilinmiş? Ki
milerine göre yapımı sırasında kıvam tutturmanın usta
lık istemesi nedeniyle almış bu adı. Anadolu’ya nasıl
dağıldığı konusunda kesin bir bilgi yok. Bir rivayete gö
re Osmanlı Sarayı’na girdiğinden ‘saray helvası’ adını al
mış, ki Mudurnulular benzerini hâlâ bu adla üretiyor.
Kastamonu’ya gittiğinizde çekme helva karşılıyor sizi,
kentin nadide hediyeliği olarak. Antalya sıra eğlencele
rinin aranılan tatlısı keten helvası, maniler eşliğinde sık
lıkla yapılmıyor artık. Genç kızların sini etrafına dizildi
ği, manilerin satılıp bilmecelerin alındığı eski Ramazan
eğlencelerine de eşlik etmiyor tel helva.
İzmit pişmaniyesini, İran ve Ermenistan’dan gelip bu
yöreye yerleşen Ermeni ustaların getirdiği söyleniyor.
Bilinen ilk pişmaniye ustası Kandıralı Hayri Usta olsa
da, pişmaniye ticari kimliğine Hacı Agop adlı bir Erme
ni şekercisi sayesinde kavuşmuş. Şekerci Agop
Dolma-Peşmek, strand helva, flax helva or stretch helva. These are
all names for the delicious confection known as pişmaniye. Although the town of İzmit east o f Istanbul is so famous for pişmaniye, it apparently originated In Iran, where according to the Büyük Larousse Encyclopaedia it Is known as peşmek. So how did it come to be known as pişmaniye, meaning ‘regret fulness? Some say that this derives from the difficulty o f get ting the texture right. It is said that it used to be made at the Ottoman palace, and hence the name palace helva, the name by which the people of Mudurnu still produce it. In the city o f Kastamonu on the Black Sea coast it is named çekme helva or stretch helva, and purchased by visitors as souvenirs. In Antalya the same sweet, this time called keten (flax) helva used to be a feature of get-togethers with friends, who made the helva them selves to the accom paniment o f ballads. Similarly in the past during Ramazan, young girls seated around a large tray kneading the helva would exchange bal lads and riddles.

A ll the o th e r pişmaniye makers in the town first leamt their skills here. W hen we arrived at the w orksh o p, the sugar, w ater and citric acid had just come to the boil in the huge pans, in which therm om eters stood, After boiling for 25 min utes the sugar syrup would be ready. Meanwhile we watched the fat being heated and the flour added and stirred con sta n tly as it ro a ste d . In K astam onu tw o typ es are made, one called çekme helva and the other saray or palace helva. They differ in the pro portion o f sugar and in the shape given to the final prod uct. Palace helva contains 65 percent sugar and is cut into lozenges, w hile çekm e helva contains 50 percent sugar and is cut into squares. O u r host, the chief confectioner, told us

neden mis gibi kokular yükselirken, ustalar malzemeyi hem karıştı
rıp, hem de ısı veren başka bir makineye alıyorlar. Yirmi dakika
sonra meyane, çekme tepsisine yayılıyor ve on beş dakika dinlen
diriliyor. Bu arada kıvama gelen ağda soğutma taşına dökülüyor.

By now the air w as filled w ith a w onderful aroma from the roasting flour. After 20 minutes the roasted flour was spread in a large tray and left for 15 minutes, while the boiled sugar was poured onto a marble slab. W hen the sugar had cooled slightly it was gathered into the centre with a spatula, and when it had thickened it was beaten for three minutes by machine, turning white and opaque in the process. T he boiled sugar was then placed in the centre of the tray containing the flour, and the five or six mechani cal arms o f the machine began to push and pull, It is this kneading process which produces the strands, turning the helva into a type of candy floss. Then the machine was turned off and the confectioner and three or four strong helpers set to w ork by hand. This was a sight worth seeing. Th e y formed the sugar into a large ring and began turning it in the flour, so that gradually the flour and sugar blended together. This is the most critical and skilled stage in the whole oper ation. Once in a while the sugar was formed into a figure of eight, folded into the centre, and then again again pulled towards the edges of the tray. Thus the mixture was finally transformed into pişmaniye. Any remaining hard lumps o f sugâr were now removed from the mass of strands. A fter being left to rest in another tray for 15 minutes, it was placed in the fluffing machine, reducing the m ixtu re to po w d er. A s it fell through to the tray below it was mixed by hand

yoğunlaştığında, ağartma makinesine alınıp üç dakika
çırpılıyor. Beyazlaşan şeker, meyanenin beklediği çek
me tepsisine alınıyor. Tepsinin bulunduğu makineye
beş-altı kol bağlı. Kollar, ileri geri hareketlerle itip çeke
rek helvanın tel tel olmasını sağlıyor. Ustabaşı, “Hele bir
görün!” diyerek geçiyor işin başına. Yanında da güçlü
kuvvetli iiç-dört kişi... Makineyi devre dışı bırakıp kol
gücüne sarılıyorlar, tıpkı eski günlerdeki gibi... Manzara
görülmeye değer. Simit şeklinde yuvarladıkları ağdayı
meyaneyle birlikte çevirerek birbirine yediriyorlar. Bu
rada kol gücü, bilek gücü devreye giriyor. Çevirme çok
önemli, çünkü yapılan en küçük hata bütün emeklerin
boşa gitmesi demek. Arada bir 8 şeklinde kıvrılan ağda
yı ortaya kenara çeke çeke tel tel yapıyor maharetli el
ler. Uzunca bir aradan sonra pişmaniye hazır! Ancak,
arada sert şekerler var. Onlar da havalandırılarak ayıkla
nıyor. Tel tel pişmaniye dinlenme tepsisine alınıp on
beş dakika bekletiliyor.
Bundan sonrası Kastamonu işi demek daha doğru, zira
pişmaniye eleme makinesine alınıp toz haline getirili
yor. Alttaki tepsiye inenler karıştırılıp helvanın her yeri
nin aynı ısıda olması sağlanıyor. Antepfıstığı serpilip
üzerleri düzleniyor, tartılıp presleniyor. Her biri yirmi
gram gelen kare ya da baklava biçimli helvalar, fıstıklı
ya da sade olarak dolum makinesine alınıyor; el değ
meden kutulanıyor. Her biri hediyelik olup süslüyor vit
rinleri.
Yıllar önce saraylarda padişahların isteği üzerine çektiri
lirmiş helva. Köylerde ise uzun kış gecelerinde siniler
etrafında toplanan kadınların eğlencesiymiş. “Un var,
yağ var, şeker var; ne duaıyon, helva yapsana!” denip,
geçilirmiş sini başına. Oyunlar oynanır, maniler söyle
nir, türküler tutturulurımış. Saray helvasını çekenler ise
bir çeşit oyun kurbanlarıymış. “Nesine, helva çekmece
sine!” diye tutuşulan iddiaları kaybedenler, padişah için
helva çekm eye giderlermiş saraya... Ne zaman mı?
1800’lü yıllarda...

This helva has been a favourite o f everyone for centuries,. made in the palace for the sultan, and in villages on long win ter nights, when the women would gather around their helva trays and chat and sing as they worked. T h e re is flour, butter and sugar. W hat are you waiting for, make some helva!' were the traditional words spoken before beginning. It is said that making helva at the palace was a traditional forfeit when bet ting in the 19th century, and the losers would set off to make
helva for the sultan. •
