飲食成分對細胞色素P450 的影響

Abstract

隨著社會工業化,日常生活中接觸與攝取到一些毒性物質的機會增加,這些脂溶性外來物在動物 體內可經由解毒酵素系統中的各種酵素反應,包括氧化、還原、水解、氫化以及去烷基等反應, 將其轉變成較易排出的水溶性狀態。細胞色素P450(cytonchrome P450, CYP)為phase l 解毒系統反應中負責外來物,例如藥物、致癌物、食品添加物及環境污染物等之氧化反應的酵素, 在解毒酵素系統中佔有重要的角色。一些細胞內的CYP酵素,可受到一些化學物質,如多環狀芳 香族碳氫化合物,巴比妥,乙醇類等物質的誘發。而其含量與表現亦會受到生理、營養素或飲食 因子的調控,例如肥胖、禁食、飢餓、醣類、蛋白質、脂質、維生素、礦物質、有機硫化合物、 多酚類化合物或食品添加物等。營養狀況會影響動物體內代謝毒物的能力,而毒物也會影響體內 的營養素狀況,良好的營養狀況才能有效的將有毒的外來物泄出去,在本文中將主要針對飲食成 份對CYP的調控作詳細的討論。
