Arabinoksilanlar da β-glukanlar gibi arpa ve yulafta bulunan diğer bir majör, glukomannan ve arabinogalaktanlar da minör nişasta dışı polisakkaritlerdir. Tez çalışmasının ilk aşamasında farklı öğütme-zenginleştirme sistemleri kullanımı ile arpa tam tanesinden 1.5-2.7 kat daha yüksek arabinoksilan içeriğine sahip LZF ve Z-LZF elde edilmiştir. İki farklı öğütme sistemi ile elde edilen fraksiyonların arabinoksilan içeriklerinin Yalın (-) ve Yalın (+) için birbirine yakın olmasının yanı sıra, valsli öğütme daha yüksek arabinoksilan geri kazanım oranı ile sonuçlanmıştır. Tez çalışmasının yulaf araştırmaları üzerine olan ikinci kısmında ise farklı öğütme akışları kullanılarak yulaf tam tanesinden 1.4-1.9 kat daha yüksek arabinoksilan içeriğine sahip kepek fraksiyonları elde edilmiştir. Valsli değirmende uzun öğütme akışı ile elde edilen ince kepeklerin arabinoksilan içeriğinin ve geri kazanım oranının kısa öğütme akışı ile elde edilen kaba kepeklerin arabinoksilan içeriği ve geri kazanım oranına göre daha yüksek olduğu belirlenmiştir.

Çalışmada minör nişasta dışı polisakkaritler bakımından zenginleştirme değerlendirildiğinde; kavuzsuz arpa örneklerinden elde edilen LZF ve Z-LZF’lerinin arpa tam tanelerine göre 1.5-2.3 kat daha fazla glukomannan ve 1.2-1.6 kat daha fazla arabinogalaktan içerdiği belirlenmiştir. Kavuzsuz yulaf örneklerinden elde edilen kaba kepek ve ince kepeklerinin ise yulaf tam tanesine göre 1.2-1.8 kat daha fazla glukomannan ve 1.1-1.2 kat daha arabinogalaktan içerdiği tespit edilmiştir.

Çalışma, sağlık üzerine olumlu etkileri olduğu bilinen toplam besinsel lifler bakımından değerlendirildiğinde; kavuzsuz yulaf örneklerinden elde edilen son ürünlerin (Z-LZF) toplam besinsel lif içeriklerinin %32-36 arasında değişim gösterdiği ve toplam besinsel lif içeriğinin arpa örneklerinin tam taneleri ile karşılaştırıldığında ise 2.4-2.7 kat daha fazla olduğu belirlenmiştir. Benzer şekilde kavuzsuz yulaf örneklerinden elde edilen kepek örneklerinin toplam besinsel lif içeriklerinin %18.4-20.6 arasında değişim gösterdiği ve toplam besinsel lif içeriğinin yulaf örneklerinin tam tanesi ile karşılaştırıldığında, 1.6-1.7 kat daha yüksek olduğu tespit edilmiştir.

Çalışmada ayrıca kavuzsuz arpa ve yulaf örneklerinden elde edilen lifçe zengin fraksiyonlarda protein ve kül bakımından önemli oranda artış (p<0.05) olduğu, aynı

örneklerin nişasta içeriklerinde ise önemli oranda (p<0.05) azalma meydana geldiği tespit edilmiştir.

Çalışmada elde edilen besinsel lifçe zengin fraksiyonlar bazı fiziksel ve fizikokimyasal özellikler bakımından değerlendirildiğinde; çalışmanın birinci aşamasında Yalın (-) ve Yalın (+)’dan elde edilen LZF örnekleri arasında yığın yoğunluğu ve porozite açısından istatistiksel olarak önemli bir fark olmamasına rağmen, pinli değirmende yapılan zenginleştirmenin Z-LZF’lerin porozitesini arttırdığı ve yığın yoğunluğunu azalttığı tespit edilmiştir. Kavuzsuz yulaf örneklerinde yapılan çalışmada ise Haskara (+) ve Haskara (-) 'den elde edilen kaba kepek örnekleri arasında yığın yoğunluğu ve porozite açısından farkların önemli olduğu belirlenmiştir (p<0.05). Diğer yandan, uzun akışlı öğütmenin, ince kepek örneklerinin porozitesini arttırdığı ve yığın yoğunluğunu azalttığı tespit edilmiştir.

Biyofortifikasyon ve farklı öğütme yöntemlerinin elde edilen lifçe zengin fraksiyonlar üzerinde etkisi incelendiğinde; Yalın (-) ve Yalın (+) kavuzsuz arpa örnekleri kullanılarak elde edilen LZF ve Z-LZF’lerin Zn, I ve Se içerikleri aynı örneklerin tam taneleri ile karşılaştırıldığında daha yüksek olarak belirlenmiştir. Ayrıca LZF’ler ile Z-LZF’ler arasında Zn, I ve Se bakımından farklılıklar istatistiksel olarak önemli bulunmuştur (p<0.05). Öğütme fraksiyonları üzerinde biyofortifikasyonun etkisi incelendiğinde, Yalın (+)’dan hem valsli hem de çekiçli değirmen kullanılarak elde edilen LZF ve Z-LZF’lerin Zn, I ve Se içerikleri Yalın (-)’den aynı değirmenler kullanılarak elde edilen LZF ve Z-LZF’lerin Zn, I ve Se içeriklerine göre istatistiksel olarak daha yüksektir. Yalın (-) kavuzsuz arpasının tam tanesi ile Yalın (+) kavuzsuz arpası kullanılarak elde edilen öğütme fraksiyonlarında mineral içeriği bakımından kayda değer farklılıkların olması, biyofortifikasyon ve farklı öğütme yöntemleri ile fraksiyon elde edilmesinin birlikte kullanımının mineral içeriği yüksek ürün elde etmede oldukça etkili olduğunu göstermektedir. Genel olarak valsli değirmen ile öğütme sonucu elde edilen mineral bakımından zenginleştirme oranının çekiçli değirmen ile öğütme sonucu elde edilen zenginleştirme oranına göre önemli ölçüde daha yüksek olduğu tespit edilmiştir.

Çalışmanın kavuzsuz yulaf üzerine olan ikinci aşamasındaki biyofortifikasyon ve farklı öğütme akışlarının kepek fraksiyonları üzerine etkisi incelendiğinde, Haskara (+) ve Haskara (-) kavuzsuz yulafı kullanılarak elde edilen kepek fraksiyonlarının Zn, I ve Se içerikleri aynı örneklerin tam taneleri ile karşılaştırıldığında daha yüksek olarak belirlenmiştir. Ayrıca Kaba Kepek ve İnce Kepek’lerde mineral içeriği bakımından farklılıklar istatistiksel olarak önemli bulunmuştur (p<0.05). Biyofortifikasyonun öğütme fraksiyonları üzerinde etkisi incelendiğinde, Haskara (+)’dan her iki öğütme akışı ile elde edilen öğütme fraksiyonlarının Zn, I ve Se içerikleri Haskara (-)’den aynı öğütme akışları kullanılarak elde edilen öğütme fraksiyonlarının Zn, I ve Se içeriklerine göre istatistiksel olarak daha yüksek olarak tespit edilmiştir. Genel olarak valsli değirmende uzun öğütme akışı ile elde edilen mineral bakımından zenginleştirme oranı kısa öğütme sonucu elde edilene göre daha yüksek olarak tespit edilmiştir.

Genel bir değerlendirme yapıldığında; yulaf ve arpa tam tanesinden elde edilen lifçe zengin fraksiyonlar, kimyasal yolla elde edilen β-glukan ekstraktları ile karşılaştırıldığında daha doğal ve sağlıklı olduğu kabul edilmektedir. Ayrıca bu fraksiyonların diğer bir avantajı, mineraller, proteinler, lifler ve biyoaktif bileşikler içeren işlem görmemiş dokulardan oluşmasıdır. Besinsel lif fraksiyonlarının bileşimlerin yanı sıra, partikül büyüklüğü, porozite ve partikül yoğunluğu gibi fonksiyonel özellikleri gastrointestinal sistemdeki fizyolojik fonksiyonları etkilediği ve bu lifçe zengin fraksiyonlarla zenginleştirilmiş gıda ürünlerinin kalitesini de etkileyebileceği beklenmektedir. Bu çalışmada elde edilen nispeten yüksek β-glukan içeriğine sahip fraksiyonların, günlük olarak tüketimi önerilen β-glukan miktarını (3 g/gün) karşılamak için gıda ürünlerine ilave edilmesi gereken arpa ve yulaf unu seviyesini azaltması beklenmektedir.

Sonuç olarak bu tez çalışması, biyofortifikasyon uygulaması ve farklı öğütme-zenginleştirme yöntemlerinin, farklı tahıllardan sağlık üzerine olumlu etkileri olan besinsel liflerce zengin öğütme fraksiyonları eldesinde kullanılabileceği belirlenmiştir.

Ayrıca gizli açlık olarak bilinen mikro besin eksikliği problemi ile mücadelede önemli bir alternatif olabileceği ortaya konulmuştur.
